Most instant desserts are built backwards. Someone decides a cake should cost three dirhams to make, and everything after that is a compromise dressed up as a recipe.
We started at the other end. The question was whether a dessert could carry real botanical ingredients, in amounts that mean something, and still taste like a cake a child asks for twice.
If we had to choose between the texture and the formulation, we agreed we would keep the formulation and start the texture again.
What took the time
Botanicals are bitter. That is the whole problem in one sentence. Two years went into the blend, the ratio, and the point in the mix where each ingredient goes in, so that what reaches you tastes like pistachio and not like medicine.
How to make it
Empty the sachet into a mug. Add water to the line. Stir until there are no dry pockets. Microwave ninety seconds, then wait one minute — it keeps cooking in the mug.
